INGREDIENTS

1 vanilla bean, halved lengthwise
2 cinnamon sticks
1/4 tsp of ground nutmeg
2 cups of firmly packed brown sugar
4 peeled Packham pears or beurre bosc pears
Double cream or ice-cream, to serve

Directions

  1. Step
    Over medium heat, add 4 cups of cold water, sugar, nutmeg, cinnamon and vanilla into a saucepan.
  2. Step
    Now add in your pears and cook them, partially covered, for not more than 20 minutes or until they become tender.
  3. Step
    Once done, remove the pears from heat and allow them to cool in syrup. Use a slotted spoon and transfer pears into a clean plate.
  4. Step
    Transfer to a baking dish and bake until apples are soft and bubbly and cheese is oozy, 35 minutes.
  5. Step
    Fire the burner back up and cook syrup over medium-high heat. Bring the syrup to a boil for not more than 10 minutes or until syrup is reduced to at least a third.
  6. Step
    Once done, serve pears with a drizzling of syrup and a generous scoop of ice cream.
